Default Pasta with Sausage and Basil

Ingredients

400g (14oz) Pasta Shells
30ml (2tbsp) olive oil
2 small onions, finely chopped
225g (8oz) Good quality sausage roughly chopped
200ml (7fl.oz) dry white wine
680ml jar passata (smooth tomatoes)
45ml (3tbsp) sun-dried tomato paste ot just use plain tomato puree
handful freshly chopped basil
salt and freshly ground black pepper


1. Cook the pasta according to the pack instructions.

2. Heat the oil in a pan and fry the onion for 2-3 minutes until softened. Add the sausage pieces and continue to cook for 5 minutes. Add the wine and heat until reduced by half.

3. Add the passata, tomato paste and basil. Bring to the boil and simmer for 10 minutes. Season to taste.

4. Drain the pasta, combine thoroughly in the sauce and serve immediately with Parmesan or just on its own.

SCRUMMY AND EASY FOR THE KIDS TO MAKE WITH MUM OR DAD'S HELP!

Default Garlic Chicken Drumsticks

Ingredients
1 tbsp olive oil
4 tbsp butter
12-16 chicken drumsticks
3 garlic cloves, finely chopped
2 tbsp fresh parsley, chopped
1 tbsp lemon juice

Heat a large, heavy-based lidded casserole or frying pan over a moderate heat. Add the oil and half the butter. Generously season the drumsticks with salt and pepper. When the butter melted and is beginning to sizzle, add the drumsticks, and fry until lightly browned all over.
Cover with a lid and let the drumsticks to fry gently for 20-25 minutes, turning regularly. Remove the lid and add the remaining butter, along with the garlic, parsley and lemon juice. Take the casserole off the heat and leave the flavours to infuse for a few minutes before serving.

DOESN'T GET MUCH EASIER THAN THIS - SERVICE WITH RICE AND VEGETABLES! (YES KIDS - V E G E T A B L E S)
